Grilled Radicchio (Radicchio ai Ferri)
Serves 6
Other vegetables such as eggplant, zucchini, and peppers can be marinated in oil and grilled in this way.
 
  • 9 Tbs. Extra Virgin Olive Oil
  • 3 large firm heads of radicchio, with as much root or base as possible
  • Salt and freshly ground pepper

    Cut the heads of radicchio in half and wash them. Shake them dry, holding them by the base. Mix oil, salt and pepper together. Marinate radicchio in this for 15 minutes.

    Grill the radicchio on the barbecue over a medium heat about 4 minutes on each side, pressing down firmly to flatten them as much as possible. Make sure the metal of the grill is thoroughly hot before you begin to cook, otherwise the radicchio will fall apart.
